Pecorino Romano
"Pecora" means sheep and Pecorino Romano is the traditional D.O.P. sheep’s milk cheese which is now, almost exclusively, made on the island of Sardinia. Pecorino Romano is the traditional cheese of Southern Italy and has a history that dates back to Roman times.
Although today, Pecorino Romano is produced in modern, EU-approved plants, the production still follows traditional, authentic cheese-making techniques. To obtain its unique, piquant flavor, Pecorino Romano is hand-salted and turned frequently during aging. Pecorino Romano has a sharp, somewhat salty flavor profile and is best used as a topping or in cooking. It can be grated, shredded or shaved.

ASI Pecorino Romano has a compact body and no discoloration. It has a perfect, traditional flavor profile and is aged a minimum of 7 months. To create a healthier product, the specification is for reduced salt. Genuine Pecorino Romano is a larger wheel with lower salt. It is aged a minimum of 9 months.
This is the traditional cheese for Caesar salad and to accompany all dishes with tomato sauce.
