Cow’s milk, D.O.P. Northeastern Italian cheese. Pressato, fresh; D’Allevo, matured. Matured cheese is further categorized into Mezzano (medium) and Vecchio (aged). Its texture can range from soft to semi-hard and all can be sliced or shred. Good on pasta, for cooking, snacking and parties. 1/22 lb

Ballarini Gorgonzola

Premium brand. And yes there really is a village named Gorgonzola! This green-blue veined pasteurized cow’s milk cheese is the traditional Italian D.O.P. cheese, produced following XII C. traditions. The texture is firm and its flavor is piquant. Crumble on top of salads, or in dressing. It is perfect with pears, as a table cheese or served at parties.
